The coffee that drips into your carafe first is measurably stronger than what drips in last, and because stronger coffee is also denser, it sinks — leaving the weak, late-brew coffee stacked on top. The earliest water through the bed carries the most soluble compounds; every minute after pulls a little less, so a drip machine spends its whole cycle running strong-to-weak into a jug nobody's moved. That thin top layer also cools fastest, and cooler coffee is very slightly denser too, which is why it just sits there separating further instead of folding itself back in.

Skip the pause-and-serve valve
Sneaking a cup mid-brew with the pause-and-serve valve doesn't just grab you the best coffee in the pot — it removes the one layer that would have balanced out everything weaker that drips in afterwards, so whoever pours last gets a noticeably thinner cup than they'd otherwise have got. The valve only blocks the drip while the carafe's physically out; the grounds keep sitting in the basket the whole time, so pulling the pot at minute one takes coffee from near the top of the strength curve, and by minute four the machine's adding water to grounds that have already given up most of what they had. You've effectively skimmed the cream and left everyone else the whey.
Pick a flat-bottom basket over a cone
A flat-bottom basket keeps the same depth of coffee across its whole width, so extraction falls off gradually as the brew runs; a cone-shaped basket funnels water toward one low point in the centre, channelling hard in the first minute and then thinning into fast, weak water for the rest of the cycle. That's a basket-geometry problem, not a beans or grind problem, which is why swapping the shape fixes something no amount of buying nicer coffee ever will. It's also why two machines brewing identical beans at the same ratio, both aiming for better drip coffee, can stratify by wildly different amounts.

Pour in rounds when serving more than one
If you fill one mug completely before starting the next, whoever's cup you fill first is drinking a genuinely different coffee to whoever's you fill last — same pot, same beans, different drink. Splitting each person's pour across two or three passes means everyone gets a blend of the strong bottom and the weak top, instead of one person getting mostly one and someone else mostly the other. It's the same logic behind splitting a pot of tea across cups in rounds rather than filling one cup fully before starting the next.
Don't trust a thermal carafe to fix itself
An insulated steel carafe holds heat better than a glass one, but that's the only thing it does better — it has no mechanism for remixing coffee once it's separated, and its tall, narrow shape actually makes stratification more pronounced than a wide glass pot does. A glass carafe on a hot plate gets a little accidental convection from the heat underneath, which nudges some mixing into the pot even if you never touch it; a sealed thermal carafe gets none of that, so once the strong coffee settles low, it stays exactly like that until a hand physically moves it again — proof it was built only to keep coffee hot, not to keep it mixed. This is the bit people skip: they swirl the first cup and assume the job's done for the whole pot, when the gradient starts rebuilding within minutes.

They spin the carafe base to keep coffee mixed, solving a five-second problem with a £15-25 device you now have to charge, clean around, and eventually replace — a spoon, or your own wrist, does the identical job for free and never runs out of battery mid-pour.
They genuinely improve how evenly water first soaks the grounds, but that only acts in the first few seconds of the brew — it does nothing to stop concentration falling across the rest of the cycle, so people buy machines specifically for this feature expecting it to fix the weak-last-cup problem and end up with exactly the same stratified carafe.
Questions people ask
Does this happen with every type of coffee maker, or just drip machines?
It's specific to methods that drip progressively into a holding vessel over several minutes — a full pot from a drip machine, or a large batch brewer. French press and AeroPress don't stratify the same way, because you're extracting into one static pool rather than dripping a strong-to-weak stream in over time; the carafe under a drip machine is really just collecting a moving target the whole time it brews.
Is the last cup actually stronger, or does it just taste different?
Both. It's genuinely more concentrated — heavier body, more bitterness — and it often carries more coffee fines too, since they settle to the bottom of the carafe by gravity the same way the concentrated liquid does. That's the muddy last cup people complain about, and it's a separate problem from the burnt taste of coffee that's sat on a hotplate for an hour, which is about evaporation and heat, not stratification.
Will one big stir at the start fix the whole pot?
It fixes cup one. It doesn't hold — the layers start reforming within minutes, so if you're pouring across a whole pot over twenty or thirty minutes, you need to repeat the swirl before each pour, not just the first one.
