The rubber gasket on your jar lid turns cold brew bad before the glass ever does. Rubber is porous, it holds a ring of coffee oil after every batch, and a rinse under the tap never gets into the seal groove where that film sits — so each new batch gets re-seeded with bacteria that then get 12 to 24 hours at room temperature to establish themselves during the steep. Filter twice — mesh first, paper second
A single strain through a nut-milk bag or mesh sieve leaves behind a haze of fine coffee particles, and those fines are what actually spoils a batch early, not the beans. A nut-milk bag typically only catches particles down to around 100 microns; a paper filter afterwards catches particles closer to 20 microns, and that gap is roughly the difference between concentrate that's still clean on day ten and one that's gone slick by day four. Squeezing the bag to hurry things along forces those same fines straight through and undoes the point of filtering twice at all.
Keep it off the fridge door
Cold brew spoils fastest in the fridge door, because a door shelf swings 6 to 8°C warmer than the back of the middle shelf for several minutes after every single open, and bacteria that survived the brew and filter stages start multiplying again once the jar spends real time above about 4°C. It isn't only heat — a mostly empty jug leaves a pocket of air sitting on the surface feeding oxidation, and light hitting clear glass on an open shelf drives the same slow damage to the oils that the temperature swings do.
Stop storing it already diluted
Undiluted concentrate genuinely holds for a week to two weeks in the fridge; the same batch mixed with water or milk and left in a jug is realistically a two-to-three-day product. Diluting it cuts the acidity that was quietly acting as mild antimicrobial protection, and mixes in a fresh, non-sterile dose of tap water or dairy on top. People pre-mix a whole jug for convenience and then can't work out why it turned days before the last batch did.
Trust the fizz test, not the smell
The clearest sign cold brew concentrate has turned isn't a sour smell, it's a faint hiss or fizz when you crack the lid — carbon dioxide from bacterial fermentation that shows up a full day or more before the liquid actually smells off. Early fermentation can even taste brighter for a day right before it drops off a cliff into flat, cardboard-ish territory, so smell and taste both lag behind what's really happening in the jar.
What didn't make the list
Felt is the hardest material in the whole setup to actually sanitise — it holds onto oils no amount of rinsing shifts, so it quietly reinfects every batch you steep in it. A £2 nut-milk bag you can turn inside out and scrub does the job better, for a fraction of the £30-40 these systems cost.
It's a genuine home trick, but it only softens the sour edge on your tongue — it does nothing to slow whatever's actually growing in the jar. You end up drinking an old batch that tastes less bad, not one that's actually safe.
Questions people ask
Can I freeze cold brew concentrate to make it last longer?
Yes — pour fully cooled, filtered concentrate into ice cube trays or an airtight container, leaving room for it to expand. It holds well for a couple of months, though you'll lose a little aromatic complexity on thaw, so freeze it in small batches rather than a whole jug at once.
Can I just taste a spoonful to check if it's turned?
Taste should be your last check, not your first. By the time concentrate tastes off, whatever's growing in it has usually had a full day's head start — crack the lid and check the surface under light before a spoon goes anywhere near it.
Is a bit of cloudiness or sediment at the bottom always a sign it's spoiled?
No. A thin layer of fine sediment settling out is normal, especially if you only strained through mesh. It's a problem when the whole batch looks hazy throughout or there's a film sitting on top — that's the point to tip it out, not a light dusting at the bottom.
