Light roast coffee needs water closer to a full boil than almost any general brewing advice admits, because the beans are denser and less broken down by heat than a medium or dark roast, so anything under about 95°C doesn't have the energy to pull out enough sugar and body to balance the acid that's already there. Most kettles' "coffee" presets sit around 90–93°C, and the popular "boil, then wait 30 seconds" rule was tuned for a medium roast — by the time that water actually meets a light roast's grounds, it's already too cool. The gap between what your kettle defaults to and what a light roast actually needs is bigger than people expect, and it's rarely the beans' fault when the cup tastes thin and sharp.

Grind finer than your medium-roast setting
The same numbered grind setting gives you a coarser effective extraction on a light roast than it does on a medium or dark one, because light roasts hold onto more of the bean's original rigid cell structure and resist fracturing into fines the way a more heat-broken-down darker roast does. That means the setting that tasted balanced on your last bag is quietly under-extracting the light roast sitting right next to it on the shelf, even though the dial reads exactly the same — your grinder isn't lying to you, it's just not telling you that the same number means something different for every roast level.
Rest beans ten to fourteen days minimum
A light roast that's only two or three days off the roaster is often still sour no matter what you do to grind or temperature, because its denser, less-broken-down cell walls trap carbon dioxide more stubbornly than a dark roast's do, and that trapped gas pushes water away from the grounds unevenly during brewing — the same channelling that reads on the tongue as sharp and thin. Dark roasts vent most of their gas within a few days because roasting has already cracked the structure open; a light roast holds onto that freshness in a way that actively works against you for the first week or so, which is sneaky, because everything else can be dialled in perfectly and you'll still taste sourness.

Push extraction further, don't back off
A sour, sharp cup is almost always the taste of under-extraction, not over-strength, which is exactly why the instinct to back off — coarser grind, cooler water, less time — makes a light roast worse instead of better. Sourness and intensity register in a similar part of the palate, so a sharp coffee reads as "too much" when the real problem is "not enough came out"; that pull-back reflex was trained on fixing over-extracted dark roasts, a completely different fault wearing a similar-sounding name. The two problems sit on opposite sides of the extraction curve, and treating them the same way is the single most common reason people give up on light roasts at home.

Swap your V60 for a slower dripper
A fast-draining conical brewer shortens contact time at exactly the moment a light roast needs more of it, because that roast's coarser fines-to-boulders spread already lets water run through faster than it should, so the two problems compound instead of cancelling out. A flat-bottomed brewer with inherently slower, gentler flow buys back contact time without you having to chase grind and temperature into ever-narrower windows, which is why some people who swear they "just can't get light roasts right" fix the whole thing by changing the dripper, not the recipe.
What didn't make the list
It works, technically — but it neutralises the acid rather than fixing why you're under-extracting it, and it flattens the bright, fruity notes that made you reach for a light roast in the first place. You end up with a duller cup that happens to be less sharp, not a genuinely better one.
Cafes use these because several different baristas need to hit the same number consistently, day after day. One person in one kitchen doesn't need that kind of repeatability — a grind ladder and a notebook gets you the same result for free, and most home units end up in a drawer within a month.
Questions people ask
I'm already brewing at 96°C and it still tastes sour — what's wrong?
Check grind and rest before pushing the temperature any further. A light roast under seven days off the roast date is still likely to channel from trapped CO2 no matter how hot your water is, and the same numbered grind setting that worked on a darker bag is probably still too coarse for this one.
How do I know when I've pushed extraction too far, rather than not far enough?
At home, on a light roast, overshooting is rarer than people expect — you're more likely to have room left to push. If a cup turns hollow, empty-finished or aggressively bitter rather than sour, that's your sign you've gone past it; step back one increment from wherever you just were, not all the way to where you started.
Does the brew method matter — pour-over vs drip machine vs French press?
Yes, quite a bit. Pour-over gives you the most direct control over temperature, grind and contact time, which is why it's the easiest method to fix this on. Many basic drip machines can't reach 96°C at all, so that's worth checking before you troubleshoot anything else. French press is more forgiving on temperature but very sensitive to grind size, so lean harder on the grind fix if that's your method.
