The burner strong enough to force water up the tube in under a minute is far too aggressive to steep coffee in for the next ninety seconds, and that mismatch is why so much syphon coffee tastes thrashed and bitter rather than clean. Starting from kettle-hot water rather than cold also shortens how long the lower bulb sits over a hard flame before crest, which is where scorching and uneven heating actually happen — cold water forces you to run full power for longer, right when you can least afford it. Once the water's up, the big pressure differential that got it there is exactly what you don't need to hold it there.
Stir twice: at crest, and again before heat-off
Coffee grounds are hydrophobic for the first few seconds they touch water, so any grounds you don't stir in immediately clump into a dry raft that never fully saturates and stays under-extracted for the whole brew. The second stir matters just as much: given ten to fifteen seconds before you cut the heat, it breaks up the surface crust that reforms above the grounds, so the vacuum pulls evenly through the whole bed instead of carving one channel straight down the middle — skip it and that crust drops through as a single dense clod during draw-down, weak on top and sludgy at the bottom.
Check the gasket before you blame anything else
A slow, weak, or stalled vacuum draw is almost always the seal, not your grind or your heat — a dried-out or misseated gasket lets air leak in and kills the pressure differential the whole draw-down depends on. The rubber or cork ring sealing the top bowl to the lower bulb hardens and shrinks with repeated heat cycling, and once it's lost its give, the vacuum forming inside the flask leaks past it instead of pulling the coffee down — you get water that never fully rises, or coffee that hangs stubbornly in the top bowl long after the flame's gone. It's a cheap part, not a reason to distrust your technique.
Grind a notch coarser than for drip
Syphon filters clog far more easily than a pour-over's, because the vacuum yanks the whole batch through in one fast pull instead of letting gravity trickle it through gently — fines a V60 shrugs off will choke a syphon's cloth or paper filter outright. A drip-fine grind often leaves a shallow puddle of coffee sitting stubbornly on top of the filter after draw-down, because fines have packed against the mesh and slowed the pull right at the point extraction should be stopping — that puddle is extra, unplanned contact time, and it shows up as bitterness.
Never let the cloth filter dry out
A cloth filter that's dried out since its last use is the most common reason syphon coffee tastes flat, sour, or faintly off in a way no amount of fiddling with grind or heat will fix — it's carrying rancid coffee oil, not clean fabric. Cloth holds onto oil in a way paper doesn't, and once that oil dries it oxidises and turns rancid; the next brew you pull through that filter picks up the rancidity along with your actual coffee, reading as a stale sourness that's easy to misdiagnose as bad beans. New cloth also carries a manufacturing sizing that tastes faintly soapy straight out of the packet if you skip boiling it first.
What didn't make the list
Beautiful, steady heat, and it looks the part on the counter, but it's £150–250 for a glorified heat lamp with a slow thermal response — you wait for it to ramp up and wait again for it to back off. A well-fuelled alcohol lamp with a properly trimmed wick, or a gas burner you've learned to read, gets the same full crest and clean draw for a fraction of the price.
People replace the whole unit — often well over £100 — when draw-down goes weak, and far more often than not it's a hardened gasket costing a few pounds. Check and replace the seal before deciding the glassware itself is the problem.
Questions people ask
My water won't fully rise into the top bowl — what's going on?
Usually one of two things: the heat's too weak to build enough pressure to force the water up (check burner strength and fuel level), or the seal between the two chambers is leaking (check the gasket, and reseat the top bowl with a twist to lock it in). Both are more common culprits than an underfilled lower bulb, though it's worth confirming you filled to the line too.
Why does my syphon coffee taste muddy or gritty at the bottom of the cup?
That's almost always fines sneaking past the filter — either the grind's too fine for a syphon's fast, single-pull vacuum draw, or the filter (cloth especially) isn't sitting dead-centre over the tube, so coffee bypasses it at the edge. Go a notch coarser and double-check the filter's centred before your next brew.
How long should a syphon brew take from start to finish?
Roughly two to three minutes once the water's already hot: under a minute for it to fully crest into the top bowl, 45–60 seconds steeping with your two stirs, then a quick, clean draw-down once you cut the heat and cool the bulb. If the whole process keeps dragging well past that, it's your heat control or grind, not bad luck.
