Fine grounds don't just over-extract in a percolator — they slip past the basket's mesh and end up boiling loose in the water below, which is where the truly ashy, scorched flavour actually comes from. A percolator forces the same near-boiling water back through the same bed of grounds for the whole brew, sometimes eight or ten cycles, instead of passing through once like a drip machine or French press, so anything fine enough for a cafetière gets punished several times over rather than just once. Go a full grind size coarser than you'd use for drip — closer to kosher or rock salt than sand — and that repeated punishment stops mattering nearly as much.
Drop to a bare simmer at first perk
A full rolling boil strips out harsher, more bitter compounds than a gentle simmer does, and a percolator left on high the whole time never gets the chance to sit below that line. Once the water's moving, you don't need violence to keep it perking — a steady, unhurried chug roughly once a second, with the water sitting closer to 90–96°C than a hard boil, keeps extraction going without slamming water through the grounds or scorching the ones pressed against the hot base plate. Time it from first perk, not colour
The coffee spraying through that glass knob looks pale for far longer than it actually tastes ready, so waiting for it to 'look like coffee' usually means you've already run three or four extra cycles past good extraction. Part of that's a trick of the eye — you're watching a thin, fast-moving spray through curved glass, not a still cup — and part of it's a trick of timing, since most people start their mental clock when the pot goes on the stove rather than when perking actually begins, which shifts with your stove, your pot and how much water's in it. Start the clock at the first real perk, not before, and not by eye.
Kill the heat, then shock the base cold
The moment the perking sound stops isn't the moment extraction stops — the metal base and the water still inside it hold enough residual heat to keep pulling flavour out of the grounds for another cycle or two, invisibly. Electric hobs are the worst offender, since the element stays hot for ages after you've dialled it down, but even a gas burner leaves a pot base hot enough to keep stewing whatever coffee is touching it. A few seconds of cold water on the base drops the temperature fast enough to actually stop it — the same logic as shocking a pot of pasta water.
Check the basket sits clear of the water
An overfilled basket or a warped spreader plate can leave grounds sitting partly submerged in actively boiling water instead of just being sprayed and drained through it, and simmering grounds directly is a harsher, more bitter process than percolating them properly. This is the fault almost nobody diagnoses, because the pot still perks normally and looks completely fine from the outside, the same blind spot that hides a burnt moka pot — the tell is coffee that still tastes burnt even after you've already fixed the grind, the heat and the timing. Sort the mechanical fit and the rest of your technique finally gets to do its job.
What didn't make the list
Dark roast feels like the instinctive fix because it already tastes 'stronger', but dark-roasted beans are more porous and give up their solubles faster, so they over-extract even harder under repeated percolation. You end up amplifying the exact problem you're trying to cover up — a lighter or medium roast, ground properly coarse, handles the recirculation far better.
Old stovetop folklore, but it doesn't reduce recirculation — it just adds sodium that mutes your tongue's read on bitterness, and eggshell does close to nothing chemically. Fix the actual cause instead of masking the symptom.
