That valve is easy to overlook because it's rarely dismantled, and the slippery film it grows can taste musty or faintly plasticky long before it looks visibly dirty. There's a nasty irony here too: the citric acid you've been conscientiously running through the machine doesn't just dissolve limescale, it also softens and cracks rubber over years of repeat cycles, so the machines descaled most religiously are often the ones with the most worn seals.
Check the drip tray's hidden foam pad
The descale cycle never goes anywhere near the drip tray, and a tray that's been quietly fermenting spilled coffee under its grate perfumes every cup that comes off the machine with a musty note your brain reads as 'the coffee's gone off' — even though the extraction itself is fine. Warm air and steam pass right by the tray on most compact machines, carrying that smell up into the cup, and the foam or felt pad tucked under the grate on some models holds moisture and stale coffee longest of anything in the machine. It's the part people genuinely forget exists, because you have to lift the grate right out to even see it.
Rule out a stale pod, not the machine
A pod stored on top of the machine, right next to its own heat, or bought in a bulk pack that takes months to get through loses the aromatic CO2 that keeps espresso from tasting flat and cardboard-y — and that flatness gets blamed on the machine every time. The foil lid holds a decent seal, but heat pushes staling straight through it, and a warm machine housing is a surprisingly common place people store their stock without ever making the connection. It's an easy thing to rule out and an easy thing to keep getting wrong for years, because the pod still looks and smells fine straight out of the box.
Tell chalky scale apart from a worn pump
A chalky, gritty aftertaste after descaling means there's still scale left and a repeat cycle with an extra rinse should clear it — but a metallic, plasticky, or thin-and-sour taste means the descale isn't the problem any more, and no amount of redescaling will fix it. That flavour shift usually tracks with a worn pump seal or pressure valve: lower pressure pushes water through the grounds with less resistance, under-extracting the shot the same way too coarse a grind would on a manual brewer, and it tends to show up two to four years in regardless of how religiously you've descaled. At that point you're no longer maintaining the machine, you're diagnosing mechanical wear.
What didn't make the list
It can genuinely help if your tap water is very hard or heavily chlorinated, but it's the last few percent of improvement, not the fix for a machine that tastes actively off — it does nothing about a dirty needle, a musty tank valve, or stale pods, which are the far more common culprits here.
It dissolves scale just as well as citric acid, but acetic acid clings to rubber seals and tubing more stubbornly, so you're often chasing a faint vinegar tang for weeks afterwards — and given how much the valve and seals already take from repeat descaling, it's not worth the extra hit.

Why does my coffee taste metallic or plasticky even after descaling?
