Preheat the pump body, not just the water

A cold metal chamber sucks the temperature straight out of your water in the few seconds before it hits the coffee, and that heat loss is the single biggest reason these shots taste thin and sour rather than simply weak. Portable pumps have no heated group head doing the job a machine does for you — the body, basket and piston are all room-temperature metal or plastic acting as a heat sink, and a small dose of water loses proportionally more heat to a cold surface than a full-size shot does. You can nail the grind and the rhythm and still pull a lukewarm, sour shot if the hardware itself started cold.

Try it
Assemble the device empty, pour boiling water in, and pump it straight through with no coffee in the basket — this 'blank' pump warms the metal on its way through, not just the outer shell. Tip that water away.
Reload with fresh near-boiling water and your ground coffee immediately afterwards, while the chamber's still warm from the blank pump — don't let it sit cooling on the table while you faff with the grinder.
In cold weather or on a plane, do the blank pump twice and preheat your cup too — ambient cold pulls heat back out faster than you'd think, from both ends.

Grind finer, then break every clump by hand

Weak shots from these devices are almost always under-extraction hiding behind a grind that would look perfectly reasonable in a home espresso machine, because the basket only holds 7-8g in a bed so shallow that a single clump or channel represents a much bigger share of your dose than it would in an 18g machine basket. You're the pump here, not a boiler holding steady pressure through resistance, so the grind has to do more of the work of slowing the water down than it would on a machine.

Start one full grind-size click finer than you'd use on a home espresso machine — expect the first stroke to feel stiff, that's correct, not a fault.
The basket's too small for a proper WDT tool, so stir the grounds in a tight spiral with a toothpick or straightened paperclip right after dosing, before you tamp — clumps are what actually cause channelling at this scale.
Tamp with a firm, level press rather than full body weight — over-tamping a fine grind in a shallow basket is what causes the stalls people usually blame on the grind size.

Pump slow and steady, not fast bursts

Uneven pumping is the single most common cause of a thin, sour shot from a hand pump, because every burst-pause-burst cycle sends a spike of pressure through whichever part of the puck offers the least resistance, blows that channel wide open, then lets it run dry while the rest of the puck barely gets wet. On a machine, the pump holds pressure steady regardless of your hand; on this device, you are the pump, so an inconsistent stroke speed becomes inconsistent extraction almost directly.

Aim for one smooth, full-travel push roughly every 1-2 seconds — count it out loud if that's what it takes to stop rushing.
If your model has a pressure gauge, watch for a needle that jumps rather than climbs steadily — that's your cue to slow down, not speed up.
If your arm tires mid-shot, stop and rest rather than finishing with rushed, ragged strokes — a shorter shot at even pressure beats a full-length one that trails off.

Bloom the puck before you pump

Fresh coffee releases a burst of CO2 the moment it meets hot water, and that gas physically pushes water away from the grounds — pump at full force straight away and you're forcing water around trapped gas pockets instead of through evenly saturated coffee, a quiet, common cause of a weak-tasting shot from beans that are otherwise perfectly fresh. Machines handle this with a built-in pre-infusion stage; your hand pump doesn't have one, so you have to fake it yourself.

Try it
Do one soft, partial pump — just enough to see a few drips start — then pause for five to ten seconds before continuing normally.
Watch for the drip slowing, or a slight bulge in the puck if your basket's clear — that's the CO2 venting, and it's your cue the bloom's done.
For very fresh beans (under a week off roast), stretch the pause closer to ten to fifteen seconds — degassing takes longer the fresher the roast.

Judge it as concentrate, not machine espresso

A hand pump can hit a genuinely high peak pressure for a stroke or two, but it can't hold that pressure steady for the whole extraction the way a machine's motor does, so even a correctly made shot from one of these will look and taste lighter and less syrupy than the same beans through a proper machine — and that's the device working as designed, not a fault to keep chasing. Comparing it against café crema sends people down a rabbit hole of re-grinding and overfilling the basket, when the honest fix is recalibrating what 'good' looks like from this specific tool.

Try a ratio closer to 1:2.5-1:3 instead of chasing a tight 1:2 ristretto — it's more forgiving of an imperfect pump and still tastes plenty strong through milk.
Taste it black first and rate it on sweetness and body, not crema — crema stays thin on these regardless of technique, because the device can't sustain the pressure that builds it.
Building a flat white or a long black on the road? Treat the shot as concentrate and extend it with milk or hot water, rather than forcing a straight shot to machine standards.

What didn't make the list

A higher 'bar rating' model

The 16- or 20-bar number on the box is a peak you might touch for one hard stroke, not sustained pressure held the way a machine holds it. Trading up to a shinier model chasing that number rarely fixes a weak shot when the real culprits are temperature, grind and pump rhythm.

Battery-heated attachments

They add real bulk and weight to a device whose entire appeal is fitting in a jacket pocket, for a heat boost the blank-pump trick gives you for free with zero extra kit.

Questions people ask

Why does my shot taste sour rather than just weak?

Sour usually means under-extraction with a side of channelling — cold water plus a grind that's slightly too coarse lets water rush through without pulling out enough sweetness, so it exits sharp and thin instead of full-bodied. Fix the water temperature and the grind together rather than one at a time; on a 7-9g puck, both problems tend to show up as the same sour, watery cup.

My shot has decent crema but still tastes weak — what's wrong?

Crema forms from CO2 and oils agitating into hot water, which happens with almost any device and fresh beans, so a good-looking cap sitting over a thin, fast, sour shot is common and doesn't mean the extraction went well. Check preheating and pump rhythm before you blame the beans or the grind.

I went finer on the grind and now the shot pulls too fast — what's wrong?

Almost always a tamp that's too light, or clumps that didn't get broken up before tamping, letting water find a shortcut around the fine grounds rather than through them. Recheck your clump-breaking pass before you go coarser again — the grind size usually wasn't the actual problem.
