If your phin floods or seizes up no matter what you do to the coffee, the plate under your grounds might be built wrong before a single scoop goes in. Most of the cheap stamped-aluminium phins bundled into gift sets have holes punched by a machine that doesn't care whether they're even — some are torn ragged on one edge, some are nearly sealed shut on the other, so water finds the path of least resistance and rushes through in one spot no matter how fine you grind. I didn't believe this until I swapped a cheap phin for a properly finished one and watched the exact same grind go from an eight-minute crawl to a clean five.
Weigh the grind, don't eyeball the texture
Flooding is caused far more often by an inconsistent grind than by a grind that's simply too coarse or too fine. A burr grinder set even slightly off produces a spread of particle sizes rather than one size — the dust-fine bits mat against the plate's holes and choke them, while the coarser chunks sitting right next to them leave gaps big enough for water to rush straight past. That's why a phin can flood and stall in the same five minutes: it isn't doing two different things wrong, it's doing the one thing — an uneven grind — that causes both.
Bloom before you add the press plate
A proper bloom lets trapped CO2 escape and lets the grounds swell evenly, so the bed settles into a flat, consistent puck instead of a lopsided one that channels water down whichever side happens to be looser. Skip straight to a full pour and the dry grounds puff up chaotically the instant they meet water, forcing liquid sideways around the edges instead of straight down through the bed — the single most common reason a phin floods on one side while barely dripping on the other. Watch for the bed to stop bubbling and puffing; that's your cue it's settled enough to add the plate, not a fixed number of seconds on a clock.
Rest the press plate — don't screw it down
Setting the press plate on loosely and leaving it there is what keeps the grounds bed even; screwing it down tight is what turns a phin into a badly-designed espresso puck that water can't push through. A phin relies on gravity, not pressure — compact the grounds under a tightened plate and water backs up with nowhere to drain, eventually spilling over the rim instead of dripping through the holes. Add the plate too early, before the bloom has settled, and you get the classic flood-then-stall: it drips hard for ten seconds, then stops dead, because the plate has locked in a bed that was still puffing and uneven underneath it. The plate's real job is to keep the grounds submerged and level, not to squeeze them.
Use water just off the boil, not boiling
Water straight off a rolling boil scalds the fines sitting at the top of the bed faster than it can extract evenly through the rest of it, which paradoxically makes a phin drip fast at first and then clog as those scalded fines swell and seal the surface. Let the kettle rest 30-45 seconds after it clicks off — you're aiming for roughly 90-96°C, the same window you'd use for a pour-over. It matters more here than in a drip machine, because nothing spreads the water out for you; it sits directly on the bed and does whatever the temperature tells it to.
What didn't make the list
They stop the clogging by strangling flow control entirely, and you lose the fine sediment and heavy body that's the actual point of drinking phin coffee over a pourover. Fix the plate and the bloom — don't mute the method with paper.
The finish on the outside has nothing to do with the machining of the holes on the inside — ornate cast gift-set phins are often less evenly punched than a plain stainless one with a tight, laser-cut hole pattern. A nicer phin just floods in a nicer body.
Questions people ask
My phin floods the second I pour — is my grind definitely too fine?
Not necessarily, and it's the first assumption almost everyone makes. Test the empty phin with plain water first — if it drains unevenly with no coffee involved at all, the problem is the hole pattern, not your grind.
How long should a phin actually take to drip through?
Around four to five minutes is normal for a standard single serve of roughly 20-25g of coffee. Finishing well under three minutes usually means the grind's too coarse or the plate's too loose; stalling past six or seven usually means fines or a plate pressed down too hard.
Why does my phin overflow the rim instead of dripping through?
It's almost always the press plate going on before the bloom has settled, or being screwed down hard enough to compact the grounds into a puck water can't get through — either way, the water backs up with nowhere to go but over the top.
